Vegetarian burgers – with a nut pattie!

Are you and your family vegetarian?
Do you ever miss having hamburgers?

When I make meat-free meals, I am always really conscious of making sure that there is enough protein on each plate. Nuts are a great way to ensure you are eating protein, and getting lots of good oils and vitamins at the same time.

I’d like to share my nut pattie recipe with you – I hope you enjoy it!

Vegetarian Nut Burgers

2 onions, diced
2 celery stalks, diced
3 tbs oil (peanut, if possible)
2 tsp Italian herbs
2 tbs flour
2 tsps vegetable stock
2 tbs soy sauce
450g chopped nuts – a mixture of walnuts, cashews, and almonds  is our favourite
225g fresh breadcrumbs
Dried breadcrumbs

Gently fry the onions and celery in oil until they are soft. This usually takes around 10 minutes.
Mix in the Italian herbs and flour – and cook for 1-2 minutes.
Transfer the ingredients to a large bowl and add the vegetable stock, soy sauce and nuts.
Mix in the fresh breadcrumbs.
Divide the mixture into 12 patties. Roll them into ball shapes, and flatten them until they are about 1cm thick.
Lightly cover each patty with dry breadcrumbs.
Cook these on a lightly oiled BBQ.
Serve with your favourite salad and sauces in a bread roll.
